It is the first time I will make this recipe from Rachel All’s Easy Meals P28. I was looking for something to tick the fish dish of the week that would tempt my two girls. They love smoked salmon so I am hoping it will be a hit with them.
Lasagne & Salad

Rather than a quick meal after swimming, this week I am making lasagne. This is a my own recipe tweeked from the hundreds I have tried and tested over the years. The best tip I learnt making lasagne was from Mary Berry – she recommended making the lasagna and allowing it to sit for +2 hours before cooking it. It enables the lasagne sheets soften so you just have that delicious pasta and sauce rather than the hard doughy texture you sometime get when the sheets have not absorbed enough moisture from the sauces. So I get to make it early afternoon and it sits until after swimming and can be popped into the oven while the girls shower.
Potato and Bacon Gratin

Meal planning is a family affair in my house and I encourage the girls to look through the cook books and see if there is anything they fancy making and eating. This week Georgina picked Rachel Allen’s Potato and bacon gratin.
Beef Kofta Curry
Friday 10th July 2020
This week I will time how long it takes us to make our 15 minute meal. My husband and I made Jamie’s Sizzling beef steak and hoi sin prawn noodle bowls and together it still took half an hour to pull it together. This week we are trying the Beef kofta curry.
Steak, mash and greens

My youngest daughter is carnivor through and through and so Saturdays dinner was her choice. A meat and two veg meal.

Paella
Sunday 12th July 2020
This week I am checking out the local fish mongers to see what gems they have to make a paella. Not your traditional english sunday lunch but my husband and I relationship was built on travelling to find the perfect seafood dish or seafood platter. This week I am plying homage to Valencia with Antony Worral Thompson’s paella.
