Welcome to A bite off each leg.

Hello! I am Amanda. I am the mother of two girls aged 9 and 11 and we moved from the UK to the Netherlands two years ago. Over the last two years I have been through the trials and tribulations of living in a new country and embraced its traditions and culture. Have been learning how to meet the needs of my children as they grow and find their place in the world and supported my husband with his career goals, the normal everyday stuff that all families face and deal with.

I have really enjoyed the way our lives has changed but one thing I have found lacking is that I have to a certain extent lost my sense of self. I had a career in finance working for companies like GE, Microsoft and Kelloggs and was amibitious and focused. Now I am a stay at home Mum and I spend the majority of my time putting everyone else first and like most Mums found myself at the bottom of my to do list or, in which was most often the case, not even on my to do list at all.

This blog is the story of how I am putting myself back a the top of my to do list in order to improve our family life.

I count myself lucky that I have made some good friends here in the Netherlands and only through talking with them have I seen that the struggles I have are shared by all.

Coronavirus has put many things on hold for us and the emotional fall out in one way is a blessing because it has helped me to see that little changes in the way I deal with things can have a big impact on our family.

I have started the 30 day Miracle Morning challenge (Hal Eldron’s Miracle Morning).

Food planning was always a chore but since we are now reducing our trips to the supermarket and having shopping delivered on a weekly basis we have had to change from deciding on the day to organising our whole week. As part of this blog I am going to be sharing the plans for the week and link to recipes either my own personal recipes or my personal favourites.

I am looking forward to sharing this with you and if one person manages to benefit then this is all worthwhile.
